Vegan Kofta Skewers Recipe

Ingredients
  

  • 50 g soy granules
  • 200 ml vegetable broth
  • 25 ml soy sauce
  • 25 ml beet juice
  • 100 g onion finely chopped
  • 75 g oat flakes
  • 3 tbsp wheat flour or gluten-free flour
  • 2 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili flakes
  • ½ tsp salt
  • Black pepper to taste
  • Drizzle of olive oil
  • Optional: chopped parsley or cilantro

Method
 

  1. Cook soy granules in vegetable broth for 10 minutes, then drain.
  2. Mix soy granules with soy sauce and beet juice.
  3. Add onions, herb, oat flakes, flour, tomato paste, and all the spices.
  4. Mix everything thoroughly into a dough-like consistency.
  5. Divide into 8 equal parts and shape around skewers.
  6. Grill, bake, or pan-fry until golden brown and cooked through.
  7. Serve hot with Romesco sauce, salad, or tahini sauce.
