- Prep the tofu: Pat tofu dry and cut into slices or cubes. Season lightly with salt and black pepper.
- Shallow fry: Heat oil in a pan over medium-high heat. Fry tofu until golden brown on both sides. Set aside.
- Sauté veggies: In the same pan, add onions and peppers. Cook for 3–5 minutes with a pinch of salt.
- Add garlic: Stir in garlic and cook for another 2 minutes.
- Make the sauce: Add Romesco sauce, soy sauce, chili flakes, and vegetable stock. Mix well.
- Simmer: Reduce heat to low, cover, and let the sauce simmer for 10–15 minutes
- Add tofu back: Return tofu to the pan. Gently stir to coat with sauce.
- Final cook: Increase heat to medium-high. Cook uncovered for 2 more minutes.
